Australian
cuisine varies dramatically depending on the region. In the
interior of the country, the table is dominated by meat dishes,
particularly lamb and mutton. Meats are usually served grilled
or roast and with potatoes, reminiscent of Northern European
staple dishes. Not for the faint- hearted, you can also find
kangaroo tail soup, barbecued emu, camel stew or gum-smoked
crocodile. Vegemite, is another Aussie invention, a black, grease-like
yeast-extract paste eaten on toast or sandwiches. However, on
the coasts and in the major cities like Sydney, Melbourne and
Perth, the gastronomy is a lot more exciting. Due to the large
influx of Italian, Greek, Lebanese and South East Asian immigrants,
in the 20th century, there has been a fusion of dishes. "Pacific
Rim Cuisine" refers to the unique Australian creative fusion
of influences in the kitchen, and is heavily dependent.
Although
the history of wine production in Australia dates back to 1788
(vineyards were planted by Captain Arthur Phillip with vines
taken from Rio de Janeiro en route to Sydney), it is only in
the last 20 years that the world has truly awakened to the excellent
quality of Australian wines. In that short time, the Australians
have taken 20% of market share from the French wines in the
UK market, and a bottle of Rosemount Chardonnay or Shiraz can
now be bought in virtually any wine merchant or deli from New
York to Madrid. The Australian’s invented the concept
of a ‘Flying Winemaker,’ and have been possibly
the most forward thinking and innovative country in the winemaking
world in terms of technology and its potential in the vineyard
and the winery.
